What’s Up Wednesday-April Edition

Hey everyone! I’m super excited to be linking up with Sheaffer Told Me To and Mix & Match Mama for their monthly What’s Up Wednesday feature. This post was so fun for me to write and I hope you enjoy hearing about what’s going on in the Minda’s Cooking world.

What We Are Eating

I’ve written before that I am a big fan of Wal-Mart Plus grocery delivery. One of the drawbacks though is if you don’t pay attention, it’s very easy to order the wrong thing. Perfect example: I ordered the ingredients for enchiladas but mistakenly got street taco sized tortillas. I decided to just throw it all in a pan and voila! Enchilada Pie was born.

My husband swears it was better than regular enchiladas. It was certainly easier so I’m declaring it a win. Speaking of my husband, he has been totally in to French Toast lately. I’ve been making homemade bread with my bread maker just so we can have French Toast.

I also made my second go at a Victoria Sandwich cake using Paul Hollywood’s recipe. My father in law loves this cake so this was an early birthday present for him.

What We’ve Been Up To

Earlier in the month, we took a week off work while our son was on spring break to embark on a home project: installing an above ground pool and expanded deck. I received this meme from no less than 4 people during that time:

My response to each was: “I really want room for a cooler so maybe we can go to three pallets!” Hardee har har.

It was a huge project that required mobilizing all the family and we didn’t get finished that week due to weather. But we’re getting there slowly but surely. Hopefully, I’ll have a finished pic to share for the May What’s Up post!

What I’m Watching

It’s hard for me and my husband to find things that we both like to watch. We have some network shows that we watch regularly (SWAT, FBI, NCIS, Mr. Mayor, The Neighborhood). During our week off, we watched the first season of Walker on HBO Max together. On my own, I’m watching Sanditon on Masterpiece, binging Parenthood when I can and hate watching the Spring Baking Championship.

What I’m Reading

When the pandemic hit in March 2020, I had two borrowed books from the public library and two from the university library. (I was stocking up for spring break!). Since that point, I’ve exclusively read e-books using the Libby app. It allows you to borrow from your library system and read on your tablet. I keep a number of books on hold at all times and the waits were pretty long for certain ones. About a month ago, I was suddenly bombarded with available books. One of them was this one:

It had been on my hold list for so long that I can’t even remember where I heard about it. But it was so, so good! It’s a mystery that’s really three mysteries in one: a present day investigator returns to his hometown of Oklahoma City to take on a case which brings back memories of a case that he was involved in as a teenager. Concurrently, a missing person’s case is being relived by the victim’s sister. The cases overlap slightly (and sometimes in sneaky ways) but never in the way you think that they might. I definitely recommend this one!

What I’m Excited About

I’m excited about warm weather and the start of summer! We’ve had some great weather the past week and I REALLY want to start shopping for flowers and plants. But I know Kentucky too well so I’m trying to wait out another week or so. I have bought some pretties for the inside of the house though.

If you follow me on Facebook or Instagram (@mindascooking), you’ve probably seen my tiered tray efforts. I jumped on the tiered tray bandwagon last Fall and I’ve enjoyed putting them together. For Spring, I did neutral colors that can carry me on into Fall although I might do a red, white and blue for the 4th of July.

This tray is a mix of some pretties I picked up on Etsy, Amazon and my own stuff (the elephant mug). Amazon has some cuter “starters” like this one to get your tray going and then you can fill in with other stuff that you find.

I also picked up this Welcome sign on Amazon that ties in with my tray. It’s really cute and there are several color options with it.

Come and knock on our door

No, I don’t have a hose just inside my door! I just noticed the reflection. Ooopsie.

I also picked up a matchy rug from Amazon back in the Fall and I change out the top mat depending on the season.

I’ve been really pleased with the quality of these!

What I’m Thinking About

Cake! I watched Joanna Gaines make a Tres Leche cake this weekend on her cooking show and now I want to make one for Cinco de Mayo. You all know I love me some Magnolia recipes and this is one that I haven’t tried yet.
